I used to eat a can of tuna as the protein component of my weekday lunch about half the time, but that was a little too much given the mercury content of even chunk light tuna (albacore is much worse.) So I started eating canned salmon most of the time instead. [livejournal.com profile] excessor spotted the Kirkland brand at Costco a few weeks ago, and it's terrific -- more, and tastier, than the usual Chicken of the Sea and the like, and at around $1.25 a can, a much better deal than the usual $2.50 or so. Bought 30 cans yesterday. Yum.

Also note that tonight is the [livejournal.com profile] handlebear memorial dance at ECR's usual Palo Alto venue.

See, every time I see a can of salmon I think instantly of my mother's salmon patties. I used to hate them because the canned salmon always contains chalky bits of bone...then I started to appreciate how those simply added texture to the entire fish.

Leave it to us southerners to take something as healthy as fish and fry it into submission. :)

Old-style canned salmon is only good for blending into things like salmon patties (which can be remarkably good, BTW.) This new style is select boneless filet, an entriely different kettle of fish (heh!).
